Grown in the high mountains of Nariño near Colombia’s border with Ecuador, this coffee comes from the volcanic slopes surrounding Las Galeras, one of the region’s most iconic volcanoes. The combination of extreme elevation, cool mountain temperatures, and mineral-rich volcanic soils creates ideal conditions for slow cherry maturation, allowing the coffee to develop exceptional sweetness, clarity, and complexity.

We recommend starting with a 1:14 coffee-to-water ratio using 16 grams of coffee to 224 grams of water.
For Las Galeras, our preferred brewing method is the AeroPress, which highlights the coffee’s medium body and rounded texture while keeping its natural brightness clean and balanced.
Start with a medium-fine grind and aim for a total brew time of around 2:30–3:00 minutes. This recipe brings forward sweetness and structure, with enough brightness to keep the cup lively while preserving the balance.
