In antiquity, wine carried the mystery of soil, season, fruit, and human craft into a single cup. It became more than a drink. It became a symbol of connection, awakening, and shared experience.

At ST. DION, we do not simply roast coffee. We search for rare and expressive coffees with clarity, structure, texture, and a sense of place. Coffees selected not only for flavor, but for the story, discipline, and fleeting beauty carried within them.

We roast for nuance, texture, and revelation. Not to impose flavor onto coffee, but to reveal what was already there.

We are drawn to coffees with clarity, sweetness, structure, and a sense of place. Some are bright and expressive, some rounded and balanced, some classic and comforting, but each is roasted to feel intentional, memorable, and alive in the cup.

Our Founders

ST. DION was founded by coffee professionals whose experience spans sourcing, roasting, hospitality, education, and coffee entrepreneurship across multiple continents and thousands of coffees.

One founder, a former financier, built and operated a specialty coffee roastery in the Middle East, through an international joint venture with partners from New Zealand. From 2016 to 2025, he led the company and grew it to more than 30,000 pounds of monthly roasted coffee production and three coffee bars before permanently moving to Los Angeles. Through this work, he became recognized as one of the pioneers helping introduce true specialty coffee in that part of the world.

The other is internationally recognized for decades of work shaping modern specialty coffee through research, education, authorship, consulting, café development, and roasting innovation. His books, teachings, and consulting have influenced a generation of specialty coffee professionals and helped establish many of the roasting and brewing principles widely used throughout the industry today.
