Every coffee we source is evaluated through rigorous quality control and sensory review. We will never purchase or offer a coffee simply because it is commercially attractive. Every coffee must first meet the standards we expect for ourselves and the standards we believe our partners deserve.
All coffees are strictly cupped and evaluated before purchase. We focus on coffees scoring 84 points or higher, with selection criteria extending well beyond score alone. Clarity, sweetness, structure, balance, consistency, traceability, and a distinct sense of place all play an important role in our buying decisions.
We seek coffees that bring distinction to a menu rather than simply filling a position on it. Coffees capable of creating memorable guest experiences, encouraging repeat visits, and helping our partners establish a clear point of difference within their market.
