About this product

Fazenda Cachoeira da Grama is one of Brazil’s historic coffee farms, rooted in the Carvalho Dias family since 1890. Located near the border of São Paulo and Minas Gerais, the farm sits in the Mogiana region, an area known for rolling hills, fertile soil, and some of Brazil’s oldest coffee traditions. The name Cachoeira means “waterfall,” while da Grama refers to the nearby town of São Sebastião da Grama. The farm spans more than 400 hectares, with coffee planted across its steep, mountainous terrain. Because of the landscape, much of the work is done by hand, from cultivation to harvest. Some of the original Bourbon trees on the farm are more than a century old, adding to the depth and heritage of this coffee. The farm is carefully managed with a strong focus on sustainability, including native tree planting, wastewater treatment, and responsible energy use. This naturally processed coffee is sun-dried to develop a rich, rounded sweetness. In the cup, it offers notes of candied fruit, cocoa, and a smooth, balanced finish. Sweet, complex, and versatile, it works beautifully across brew methods and also makes an excellent single-origin espresso.

How to brew

We recommend starting with a 1:18 coffee-to-water ratio, which provides an excellent total extraction level and maximizes flavor pulled out of the ground coffee. For our single origin coffees we recommend a pour over method either on a Chemex, V60 or Kalita Wave on a 5 or 6 grind setting.
